This celebratory English Barley Wine presents a luscious, dessert-wine density driven by a massive 30° Plato extract. The sensory profile is dominated by the multi-layered sweetness of English pale and crystal malts, providing a foundation of rich toffee and biscuit. Aging with blue raisins lends a profound dried-fruit depth, while the additions of hibiscus, cornflower, and mallow introduce a unique herbal complexity and subtle floral aromatics. At 11% ABV, the alcohol is integrated but decidedly warming. This is a bold, velvety sipper where the traditional dark fruit character of the style is elevated by botanical nuances and a gentle tartness from the hibiscus.
Appearance. Deep copper to dark mahogany with striking ruby and garnet highlights from the hibiscus and flower petals. Clarity is brilliant. It pours with a thin, creamy, off-white head that shows low retention, leaving viscous legs on the glass.
Aroma. High intensity with a complex bouquet of caramel, toasted bread, and toffee. Prominent dark fruit notes of blue raisins and plum are complemented by floral accents of mallow and an earthy, tea-like quality from the cornflower. Soft, rounded alcohol warmth and a hint of vinous fruitiness are present.
Taste. Initial impression is a rich, multi-layered malty sweetness featuring caramel and biscuit flavors. The middle palate is filled with intense raisin and dried cherry notes. A delicate herbal character and slight acidity from the hibiscus provide a counterpoint to the sweetness. Bitterness is moderate but smooth, leading to a long, lingering, and warming finish with oxidative notes of fine port.
Mouthfeel. Full-bodied and exceptionally viscous with a chewy, velvety texture. Carbonation is low, enhancing the luscious mouth-coating sensation. A significant but smooth alcohol warmth is felt throughout, without any harsh or fusel burn.
