Brouwerij Kestemont Rabarber is a vibrant, artisanal Lambic that beautifully bridges Pajottenland tradition with the sharp, garden-fresh character of organic rhubarb. Utilizing a base of at least one-year-old Lambic brewed with Pilsner malt and unmalted wheat, the addition of three hundred grams of rhubarb per liter creates a sensory experience reminiscent of a rustic rhubarb pie. The four-month cask fermentation allows the red stems to meld with the wild yeast, resulting in a complex interplay of earthy, barnyard funk and bright, lactic acidity. It presents a sophisticated sweet-sour profile, balancing the fruit's natural tartness against the deep, funky soul of aged wild ale.
Appearance. Presents a hazy, golden-amber hue with distinct salmon or pink highlights from the red rhubarb stems; the white head is thin with poor retention, typical of the style.
Aroma. High intensity with a dominant sharp, fruity tartness of rhubarb and green apple; complex funk follows with notes of hay, wet straw, and a light barnyard earthiness over subtle bready malt.
Taste. Initial impression is a bracing, clean lactic sourness followed by the vegetal sweetness and piquant tang of fresh rhubarb. The palate is supported by low grainy malt flavors, while aged hop bitterness remains below the sensory threshold. The finish is bone-dry and refreshingly acidic, with lingering notes of fruit skin and funky yeast.
Mouthfeel. Medium-light body with a high, puckering tartness that is sharp but not astringent; carbonation is moderate, providing a lively prickle that accentuates the dry finish.
