This artisanal Fruit Lambic presents an evocative marriage of spontaneous fermentation and farm-grown blueberries. The sensory profile is defined by a vibrant interplay between the earthy, dark fruit character of fermented blueberries and the complex, funky depth of a mature lambic base. Aromas of wild yeast, aged hay, and dusty cellar notes mingle with the tart skin of fresh berries. On the palate, a sharp but refined acidity carries flavors of skins and pits, transitioning into a bone-dry finish. Effervescent and refreshing, it showcases the rustic, wild elegance characteristic of the Zenne Valley tradition through its delicate balance of fruit and funk.
Appearance. Deep ruby to vivid purple-magenta with a slight haze from fruit solids (SRM 15-22). It supports a persistent, fine-beaded, light pink mousse-like head that leaves delicate lacing on the glass.
Aroma. High intensity aromatics of fermented blueberries and dark skins, underpinned by classic gueuze-style funk including horse blanket, wet hay, and a light goaty note. A sharp, lactic acidity is present alongside subtle oak-derived tannins and an earthy soil character.
Taste. Initial sharp tartness gives way to nuanced, earthy blueberry flavors and a complex, funky base. Notes of lemon-like acidity, aged hops, and leather are balanced by the vinous quality of the fruit. The finish is bone-dry and crisp with a lingering puckering sensation and virtually no perceived hop bitterness.
Mouthfeel. Light to medium-light body with high, sparkling carbonation that provides a lively, scrubbing sensation. It features a noticeable tart, puckering acidity but remains smooth with no astringency and a very faint, well-integrated alcohol warmth.

Veel van onze ingrediënten kweken we zelf, en we hebben al wel is overschotjes die uiteindelijk niet tot bij een klant zijn geraakt. Wat doe je dan, als je twee palletten blauwe bessen hebt staan die je niet meer verkocht krijgt? De brouwers in ons denken dan: "Zou dat goed passen bij Lambik"? Wat blijkt na vier maanden op vat: pakt van wel!Onze Blauwe Bes heeft al het goede van Lambik, en een fruitige, aardse smaak van de blauwe bessen. Toegegeven, het is een specialleke en een probeersel. Maar als jullie hem ook kunnen smaken, maken we er sowieso meer van. We hebben 125 gram blauwe bessen gemengd met éénjarige lambik, dit op vat laten rijpen gedurende een viertal maanden, wat na botteling nog eens verder gist op fles.

One of them is that we grow several of our ingredients ourselves, and it tends to happen that you find yourself with some leftover produce. So what do you do, if you have several hundred kg of blueberries which you cannot sell anymore? The brewers in us immediately think: “Is it farfetched to mix it with our lambic?” An overwhelming “hell no” was the answer after fermenting for about four months.
Our Blueberry lambic has all what is good about lambic, which is quite a bit, and a fruity, earthy taste of the blueberries. We have to admit, it’s a bit special, and an experiment. But if you like it, as we do, scout’s honor, we will make more of it! We added about 125 gram of blueberries per liter of lambic of at least one year old. After a second fermentation in the bottle, the result is quite fascinating. We like it, do you? Please let us know.
