Spilling the Tea is a sophisticated take on a Saison, utilizing the spicy, rustic backbone of Rye to complement its traditional farmhouse roots. The pour reveals a burnished gold hue with an effervescent character. On the nose, the aromatic bergamot of the Earl Grey tea takes center stage, mingling seamlessly with the peppery phenols and stone fruit esters produced by the Belgian yeast. The palate follows suit, where the tea’s citrusy brightness meets the earthy grit of the Rye malt. Highly attenuated and crisp, it finishes bone-dry with a lingering herbal tea note and a mild, peppery warmth typical of its strength.
Appearance. Pale orange to burnished gold (8-10 SRM) with a slight hazy, unfiltered appearance. Topped with a dense, rocky, long-lasting white head that leaves significant Belgian lace.
Aroma. High intensity aromatics of floral bergamot and citrusy Earl Grey tea. Moderate spicy phenols reminiscent of black pepper and fruity esters of pear and apple. Low grainy, spicy rye malt notes are present.
Taste. Initial impression is a bright burst of citrus and spicy rye. Mid-palate features a soft, grainy malt profile with earthy tea tannins and black pepper yeast character. Moderate bitterness is enhanced by a very high attenuation, leading to a bone-dry, crisp finish with a lingering herbal and spicy aftertaste.
Mouthfeel. Medium-light body with a slight silkiness from the rye. Very high carbonation providing an effervescent, prickly sensation. Light, well-integrated alcohol warmth. Minimal astringency.
