This barrel-aged Doppelbock presents a decadent sensory profile shaped by twenty-four months in Cognac casks. The foundation is a rich tapestry of roasted malt and deep layers of dark caramel, creating a robust, mahogany-hued depth. The extended barrel maturation introduces a luxurious, woody complexity with prominent notes of vanilla and subtle spice that intertwine with the base beer's natural Maillard richness. A vinous, spirit-like elegance from the Cognac casks softens the malt sweetness, leading into a warm, lingering finish. The result is a highly sophisticated lager that balances traditional strong German malt character with intense, barrel-derived sophistication and warmth.

Appearance. Deep mahogany with brilliant ruby highlights; excellent clarity. Crowning the pour is a dense, creamy, and persistent off-white head that leaves moderate lacing on the glass.

Aroma. High intensity malt-forward bouquet featuring toasted bread crust and dark caramel. Prominent barrel-derived vanilla and oak aromatics are layered with a sophisticated Cognac spirit character. Subtle notes of plum and dark fruit leather emerge alongside a clean, moderate alcohol presence.

Taste. Very rich and malty-sweet initial impression with flavors of toasted malt and caramel. The mid-palate introduces a luxurious barrel influence, offering notes of dried fruit, vanilla, and fine-grained oak tannin. Bitterness is low to moderately low, allowing the malt and wood to dominate. The finish is smooth and warming with a lingering, clean aftertaste of toasted grain.

Mouthfeel. Full-bodied and velvety on the palate with a very smooth texture. Carbonation is moderate-low. A noticeable and well-integrated alcohol warmth provides a soothing sensation without any harshness or burning.
