This Double IPA presents a unique intersection of barrel-matured depth and vibrant hop freshness. After six months in Gouden Carolus and brandy barrels, the beer retains its lively character through post-maturation dry hopping. The aroma is a bright burst of citrus and tropical fruit, layered over sophisticated notes of spirited oak and dried vine fruits. On the palate, the assertive bitterness of a classic Double IPA is softened by the smooth, warming presence of brandy and the complex malty undertones of the spirit barrels. It finishes remarkably clean and dry, balancing the heavy barrel influence with a refreshing, hop-forward intensity and a crisp, lingering bitterness.
Appearance. Deep gold to light copper (10-12 SRM) with slight haze from dry-hop particulates. Features a moderate-sized, persistent, off-white head with good lacing.
Aroma. High intensity hop aroma featuring grapefruit, orange zest, and mango. This is complemented by secondary notes of brandy-soaked oak, faint vanilla, and dark fruit esters derived from the Gouden Carolus barrels. Neutral, grainy malt in the background.
Taste. Strong citrus and tropical fruit hop flavors lead the palate, followed by a firm, moderately high bitterness. The barrel aging contributes distinct flavors of brandy, toasted wood, and a subtle vinous character. Finishes dry with a clean, lingering hoppy aftertaste and no harshness.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is moderate. A noticeable but smooth alcohol warmth is present, well-integrated with the barrel character.
