This Imperial Stout presents a decadent sensory profile shaped by eleven months of maturation in Heaven Hill bourbon barrels. The experience begins with a commanding presence of bittersweet chocolate and heavy roast, seamlessly integrated with the characteristic vanilla, toasted oak, and smooth caramel notes derived from the bourbon-soaked wood. Dark fruit esters of plum and raisin weave through the mid-palate, while the extended aging process has mellowed the 10% ABV into a sophisticated, velvet warmth. It is a harmonious marriage of scorched grain and spirits, culminating in a complex, lingering finish of espresso and sweet oak.

Appearance. Jet black and completely opaque (40 SRM). It pours with a thick, creamy, deep tan head that shows moderate retention and leaves significant lacing on the glass, with noticeable legs visible due to high viscosity.

Aroma. High intensity and multi-layered. Dominant aromas of roasted coffee, dark chocolate, and black licorice are enriched by prominent bourbon-derived notes of vanilla, toasted coconut, and sweet oak. Subtle esters of dried figs and prunes are present, balanced by a hint of spicy alcohol and a very low earthy hop character.

Taste. The initial impression is intensely roasty, featuring espresso and charred grain. A rich malt sweetness follows, tasting of dark chocolate and burnt caramel, which is immediately joined by the smooth, woody character of the barrels. Hop bitterness is firm but well-supported by the thick body. The finish is long and bittersweet, with a lingering aftertaste of roast and bourbon spice.

Mouthfeel. Full and chewy with a luscious, velvety texture. Carbonation is low to moderate, enhancing the creamy mouthfeel. A smooth, gentle alcohol warmth is clearly present and noticeable as a background character, but well-integrated and devoid of harshness.
