Created to celebrate Utrecht’s 900th anniversary, this Spice, Herb, or Vegetable Beer offers a transportive sensory journey back to medieval brewing traditions. The signature addition of Gale provides a complex, resinous, and balsamic profile that weaves through a sturdy malt backbone of honey and toasted grain. Aromas of eucalyptus and woodsy herbs complement yeast esters reminiscent of poached pear and spice. On the palate, the resinous Gale character delivers a unique, earthy bitterness that balances the 7.5% alcohol warmth. This jubilee ale is a harmonious fusion of historical gruit ingredients and modern craft, finishing with a lingering, spicy, and slightly medicinal dryness.
Appearance.Deep amber to copper (12–15 SRM). Topped with a dense, persistent off-white head that leaves moderate lacing. Clarity is generally clear with a very slight natural haze.
Aroma.High intensity. Dominant herbal and resinous notes from the Gale, offering scents of bay leaf, eucalyptus, and dried forest floor. The malt base provides secondary notes of honey, biscuit, and light caramel. Low floral hop aroma is present, alongside moderate fruity esters of pear and red apple.
Taste.The initial impression is a blend of sweet, toasted malt and intense herbal complexity. The flavor of Gale is prominent, providing a balsamic and slightly minty character. Hop bitterness is moderate, though the Gale adds a firm, tea-like tannic bitterness. The finish is semi-dry and lingering, with a clean alcohol presence and a spicy, herbal aftertaste.
