Brouwerij Hommeles Mosaic Weizen
This Specialty IPA harmonizes the creamy, wheat-driven texture of a traditional Weizen with the bold, modern impact of Mosaic hops. Dry-hopping imparts intense aromatic layers of mango, blueberry, and stone fruit, which dance over a dark, complex malt bill. The appearance is unexpectedly deep, showing mahogany to black hues with a persistent tan head. Subtle notes of chocolate and toasted bread from the malts provide a sturdy backdrop for the assertive bitterness, while the fermentation remains clean with only a hint of fruity esters. It concludes with a dry, resinous finish, offering a sophisticated interplay between roast and tropical fruit.
Appearance. Dark brown to black (30–35 SRM). The tan head is moderate in size, persistent, and leaves significant lacing. Clarity is generally clear, though a very light haze from the wheat content may be present.
Aroma. High intensity hop aroma with distinct Mosaic notes of papaya, blueberry, and tangerine. Malt character is moderate with toasted bread and light cocoa scents. Fermentation is clean, showing only very low spicy or fruity esters.
Taste. High hop flavor mirror the aroma with mango and stone fruit. Malt provides a supportive low to medium flavor of chocolate and toast, avoiding any burnt or ashy character. Bitterness is medium-high and firm. The finish is dry and clean with a lingering berry-like hop aftertaste and a touch of light roast.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture derived from the wheat. Carbonation is moderate. A light, well-integrated alcohol warmth is present without being hot or distracting.
