This barrel-aged Doppelbock presents a complex layering of deep malt richness and sophisticated adjunct character. The aroma is dominated by honeyed sweetness and a gentle veil of campfire smoke, which gives way to the subtle, refined influence of whiskey barrels. Expect notes of vanilla and toasted oak harmonizing with the base beer’s Maillard-driven profile of toasted crusts. On the palate, the decadent malt core provides flavors of dark fruit leather and raisins, bolstered by a smooth, lingering honey finish. Despite the 8% ABV and barrel treatment, it maintains a clean lager fermentation character with a well-integrated, warming presence that remains remarkably smooth.

Appearance. Deep copper to dark brown in color (20-25 SRM) with brilliant clarity and noticeable ruby highlights. It supports a large, creamy, persistent off-white head with moderate lacing.

Aroma. High intensity maltiness featuring rich Maillard products, toasted bread, and light caramel. A distinct honeyed floral sweetness is present, alongside a subtle, clean smoke character and whiskey-derived notes of vanilla and faint oak. No hop aroma is detectable; low esters of plum and raisin are present.

Taste. Very rich and deeply malty initial impression. Flavors of toasted bread and dark fruit leather dominate the palate. The addition of honey provides a rounded sweetness that balances the moderately-low bitterness. Subtle smoke and whiskey-soaked wood appear mid-palate. The finish is malty-sweet and lingering, yet clean and well-attenuated without harshness.

Mouthfeel. Medium-full to full body with a smooth, velvety texture. Carbonation is moderate. A noticeable but gentle alcohol warmth from the 8% ABV and whiskey barrels is present, providing a comforting heat without any burning or astringency.
