Brouwerij Het Nest

This innovative hybrid marries the robust character of a Belgian Tripel with the crisp, rustic acidity of local cider. The pour reveals a complex interplay between the honeyed, grainy sweetness of the Schuppenboer Grand Cru base and bright, tart notes of sun-ripened apples. High fermentation esters of pear and subtle banana entwine with spicy, peppery phenols typical of Belgian yeast. At 9.5% alcohol by volume, a refined warmth supports the medium-full body without overshadowing the fruit. The finish is remarkably dry and effervescent, leaving a lingering trail of orchard fruit and delicate floral hops, showcasing a sophisticated balance between beer and pomme.

Appearance. Deep gold to amber (7–12 SRM). Generally clear to slightly hazy with a large, persistent, mousse-like white head that leaves significant lacing.

Aroma. High intensity; prominent fresh apple and cider-like tartness layered over a Belgian Tripel profile. Noted spicy phenols (clove, white pepper) and fruity esters (pear, red apple). Subtle bready, honey-like malt sweetness is present with very low floral hop notes.

Taste. Initial impression is a blend of sweet, grainy malt and sharp, acidic apple juice. The middle palate features spicy yeast character and light floral hop flavors. Bitterness is low to moderate, allowing the cider's natural acidity to provide balance. The finish is dry and cleansing with a lingering apple-skin tannin and warming alcohol.

Mouthfeel. Medium-full body with high, effervescent carbonation. Significant but well-integrated alcohol warmth is felt. Smooth texture with a light, crisp astringency from the cider components.
