This Imperial Stout serves as a decadent canvas for in-house roasted Ethiopian Djimmah coffee. The sensory experience is dominated by a complex interplay of deep, dark chocolate and the coffee’s inherent vibrancy. Lively notes of red berries and ripe raspberry emerge through the roasted layers, lifting the heavy malt profile. Appearance. Opaque ebony black (SRM 40+). Pours with a thick, persistent, deep mocha-colored head with excellent retention and dense lacing.

Aroma. High intensity. Dominant aroma of freshly roasted Djimmah coffee, offering distinct layers of red berries and raspberry. Supporting notes of dark chocolate, espresso, and lightly charred malt. Low earthy hop character and moderate dark fruit esters.

Taste. Initial rich dark chocolate and cocoa powder, followed by the bright acidity and fruit-forward flavor of the coffee. Significant raspberry and red berry flavors permeate the mid-palate. High bitterness from both roasted malts and hops is balanced by residual malt sweetness. The finish is long and complex, featuring lingering cold-brew coffee.
