A complex evolution of the Belgian Tripel, this barrel-aged expression layers vibrant Timut Peppers over a traditional monastic foundation. The peppers amplify the style's inherent citrus and spice, delivering sharp grapefruit zest and woody pepper notes that mingle with classic Belgian yeast esters of orange and pear. Pilsner malt provides a honey-like backdrop, while time in the barrel introduces nuanced oak and a refined smoothness. The result is a bold, high-gravity ale where the prickly spice of the peppers meets a dry, effervescent finish and a lingering, sophisticated warmth.
Appearance. Deep gold to pale amber in color (6-8 SRM). Brilliant clarity with an effervescent pour. Topped with a long-lasting, creamy, rocky white head that leaves dense Belgian lacing.
Aroma. High intensity bouquet featuring the distinctive grapefruit and floral spice of Timut Peppers. This is supported by spicy, peppery phenols and moderate fruity esters reminiscent of orange peel and pear. The malt character is light and honey-like, with a soft oaky depth from the barrel aging and a hint of spicy alcohol.
Taste. Spicy initial impression where Timut Peppers provide a bright grapefruit zest and woody bite. This melds into a supportive Pilsner malt sweetness and a complex profile of clove-like phenols and citrusy esters. High bitterness is balanced by a very dry finish. The aftertaste is long and spicy with a sophisticated touch of oak tannin.
Mouthfeel. Medium body, remaining lighter than the gravity suggests through high attenuation. High carbonation creates a lively, effervescent mouthfeel. Well-integrated alcohol provides a gentle, deceptive warmth without harshness.
