Down the Rabbithole is a decadent Imperial Stout that leans into its pastry-inspired profile with indulgent layers of fudge and dark chocolate. The sensory journey is dominated by the rich, toasted aroma of coconut, which weaves through a dense tapestry of roasted malts. On the palate, the 10% ABV provides a smooth, integrated warmth that supports flavors of bittersweet cocoa and creamy vanilla-like sweetness. Despite its intensity, the beer maintains a harmonious balance between the charred bitterness of roasted grains and the luscious, dessert-like qualities of its adjuncts. It is a bold, velvety experience that transforms the classic stout structure into a liquid confection.

Appearance. Jet black and opaque in the glass; pours with a thick, deep tan head that shows moderate retention. High viscosity is evident through heavy legs that coat the sides of the glass.

Aroma. High intensity with a decadent focus on toasted coconut and rich milk chocolate fudge. Underlying notes of espresso and charred grain provide a robust foundation, complemented by subtle dark fruit esters like black cherry and raisins. Hop aroma is absent.

Taste. The initial impression is one of liquid chocolate ganache and oily, toasted coconut. The mid-palate reveals complex layers of roasted malt, espresso, and a touch of black licorice. While the malt sweetness is prominent, a firm roasted bitterness provides necessary balance. The finish is long and lingering, transitioning from a fudge-like sweetness to a clean, warming dryness with a hint of cocoa powder.

Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the creamy, coating mouthfeel. A smooth, well-integrated alcohol warmth is present and noticeable but never sharp.
