To celebrate two decades, Emelisse presents this ultra-concentrated Eisbock, a massive powerhouse that blurs the lines with the richness of an Imperial Stout. The profile is defined by intense, layered Maillard products, offering deep waves of toasted bread, dark chocolate, and caramelized sugars. Concentrated dark fruit notes of plum and raisin emerge from the thick malt base, while the 19.5% ABV provides a smooth, elegant warmth rather than harshness. It is a viscous, celebratory sipper where the decadence of a pastry-inspired malt bill meets traditional freeze-distillation for an exceptionally long, complex finish.
Appearance.Deep dark brown to nearly black (30+ SRM) with ruby highlights. Creamy, medium-brown foam with moderate to poor retention and pronounced legs indicating high viscosity.
Aroma.High intensity. Intense bready and toasty malt with notes of dark chocolate, caramel, and dark fruit such as plum and raisin. Definite but smooth alcohol presence without solventy notes. Clean fermentation profile; no hop aroma.
Taste.Rich, sweet malt with toasted qualities, chocolate, and significant malt-derived dark fruit esters. Significant alcohol warmth balances the sweetness effectively. Hop bitterness is low to moderate, just enough to avoid being cloying. No hop flavor. Finish is rich and long with a certain alcohol-driven dryness.
Mouthfeel.Very full-bodied and viscous. Low carbonation. Significant alcohol warmth without sharp hotness. Smooth, silky, and creamy without harsh edges.
