Brouwerij Eleven Tonen Van Joon
Tonen Van Joon is a creative Dunkles Weissbier hybrid, melding traditional German wheat character with a modern IPA twist. The classic WLP300 yeast provides signature banana and clove notes, which intertwine with the deep, bready richness of Munich and caramel malts. The addition of elderberries introduces a subtle dark fruit complexity and a hint of winter warmth. A generous dry hop of Sabro Cryo and Talus brings a vibrant layer of citrus, cream, and tropical fruit, contrasting the toasted malt base. This fusion results in a complex, medium-bodied ale that balances yeast-driven esters with bright, resinous hop aromatics and a refreshing, fruity finish.
Appearance. Deep copper to dark mahogany brown (18–23 SRM). Features a thick, moussy, long-lasting off-white head with excellent lacing. The appearance is notably hazy with a dull shine from the wheat and yeast suspension.
Aroma. High intensity. Prominent banana and clove phenols from the WLP300 yeast are well-integrated with bready, toasted malt and rich caramel. Distinctive hop aromas of coconut, pink grapefruit, and tropical fruit from the Sabro Cryo and Talus dry hop are present, complemented by a subtle, dark floral berry note.
Taste. Initial impression is malty and fruity. Soft, bready wheat and caramel malt flavors provide a backbone for banana and spicy clove esters. The hop flavor is assertive for the style, showing citrus and tropical notes. Elderberry adds a light, tangy fruit depth. Finishes rounded and flavorful with a moderate bitterness that exceeds traditional style expectations, leaving a clean, fruity aftertaste.
Mouthfeel. Medium-full body with a fluffy, creamy fullness derived from the high wheat content. Carbonation is moderate to high, providing an effervescent quality. Alcohol warmth is light and well-integrated, suitable for its 5.5% ABV.
