This collaborative Saison offers a vibrant sensory profile defined by its rustic grain base and elegant floral accents. The addition of spelt provides a soft, hazy appearance and a distinctively nutty, grainy foundation that balances the beer's high attenuation. Strisselspalt hops contribute delicate herbal and spicy notes, which are amplified by the infusion of floral jasmine tea. Together, they create an aromatic bouquet of white flowers and citrus. On the palate, the yeast-driven peppery phenols and stone fruit esters merge with a crisp, bone-dry finish, making this an exceptionally refreshing and complex take on the traditional Belgian style.

Appearance. Pale straw to deep gold with a persistent, rocky ivory head. Characteristically hazy due to the use of spelt, exhibiting fine effervescence and excellent Belgian lacing.

Aroma. High intensity aromatics featuring a complex blend of floral jasmine, spicy Strisselspalt hops, and peppery yeast phenols. Subtle notes of lemon zest and pear are underpinned by a rustic, grainy malt character.

Taste. An initial burst of citrus and floral tea leads into a mid-palate of soft, grainy spelt malt. Moderate bitterness provides structure, while the finish is remarkably dry and crisp with lingering notes of cracked black pepper and herbal spice.

Mouthfeel. Medium-light body with a soft, slightly creamy texture from the cereal grains. High carbonation creates a lively, prickly effervescence on the tongue. Gentle alcohol warmth is well-integrated.
