A Little Less Conversation is a sophisticated Straight Sour Beer that bridges the gap between summer refreshment and winter complexity. This kettle sour, co-brewed by Eleven and Van Moll, presents a vibrant citrus profile driven by fresh lemon peel. Maturation in Buffalo Trace barrels infuses the sharp lactic acidity with nuanced layers of charred oak and soft bourbon vanilla. The result is a crisp, straw-colored ale where the bright, lemony bite is tempered by the mellowing influence of the whiskey-soaked wood. Appearance. 2–4 SRM. Very pale straw color with a slight haze. Large, dense white head with poor retention and minimal lacing. Highly effervescent.

Aroma. High intensity. Dominant lactic sourness blended with bright, zesty lemon. Secondary notes of vanilla and toasted oak from Buffalo Trace barrel aging are evident. Low crackery malt character; no hop aroma. Clean, ester-forward fermentation profile.

Taste. Initial impression is a sharp, clean lactic acidity, immediately followed by fresh lemon peel flavors. The mid-palate reveals subtle whiskey notes and light wood tannins.
