This Imperial Stout presents a commanding sensory profile, defined by its 360-day maturation in Heaven Hill Bourbon barrels. The pour is gitzwart—a deep, jet black—offering a dense, dark tan head. The aroma is a complex tapestry of dark chocolate, espresso, and rich vanilla, underscored by the unmistakable presence of oak and toasted coconut from the American whiskey casks. On the palate, the intensity of roasted malts meets the warmth of the spirit, delivering notes of black cherries, molasses, and a lingering, bittersweet finish. A prickly carbonation provides a stimulating counterpoint to the velvety, full-bodied texture, creating an ultimate, contemplative experience.
Appearance. Jet black (40+ SRM) and completely opaque. Pours with a thick, dark tan, creamy head with moderate retention that leaves persistent lacing. High viscosity is apparent in the slow-moving legs.
Aroma. High intensity with a rich blend of bittersweet chocolate, roasted coffee, and burnt grain. The barrel aging introduces prominent notes of vanilla, oaky tannins, and a hint of coconut. Moderate dark fruit esters like raisins and figs are present, alongside a clean but potent bourbon-spirit warmth. Hop aroma is very low.
Taste. Bold and multifaceted, featuring an initial impact of deep cocoa and roasted malt bitterness. The mid-palate reveals layers of caramel, molasses, and dried plums, harmonized by the vanilla and char of the bourbon barrels. Bitterness is firm, balancing the residual malt sweetness. The finish is long and warming, evolving from espresso roast to a smooth, vinous aftertaste of aged spirits and oak.
Mouthfeel. Full-bodied and luscious with a chewy, velvety texture. Carbonation is moderate and slightly prickly on the tongue. Significant alcohol warmth is present and noticeable but smooth, lacking any harshness. Low astringency from the dark grains.
