Brouwerij de Molen Singing Sirens

Imperial Stout 10.2 º 63 IBU
Singing Sirens is a decadent Imperial Stout that harmonizes the aggressive roast of Brouwerij de Molen with the comforting, aromatic profile of speculoos spices. At 10.2% ABV, it presents an opaque, midnight-black pour topped with a dense, dark tan head. The sensory journey is dominated by rich cocoa and espresso notes, intertwined with distinctive aromas of cinnamon, nutmeg, and ginger. On the palate, a deep roasted malt foundation supports flavors of caramelized biscuit and dark chocolate. A firm bitterness balances the spice-driven sweetness, leading into a lingering, velvety finish characterized by smooth alcohol warmth and a complex, spicy aftertaste.
Appearance. SRM 40; jet black and completely opaque; thick, persistent dark tan head with excellent lacing; visible legs indicative of high viscosity.
Aroma. High intensity; rich roasted malt notes of bittersweet chocolate, cocoa, and heavy toast; prominent spicy character of cinnamon, clove, and ginger; moderate esters of raisins and dried plums; smooth, clean alcohol presence.
Taste. Intense initial impression of dark roasted grains and black coffee; prominent flavors of speculoos cookies, toasted bread, and molasses; medium-high bitterness provides a clean counterpoint to the malt richness; finish is moderately dry with lingering notes of roast and baking spices.
Mouthfeel. Full-bodied and chewy; velvety, luscious texture; moderate-low carbonation; noticeable and pleasant alcohol warmth without being sharp or solventy.
