Sauer & Mauer Grapefruit is a vibrant Wild Specialty Beer that balances aggressive citrus with the complex funk of a wild fermentation. The profile is dominated by the sharp, zest-heavy aroma of fresh grapefruit, supported by underlying notes of earthy Brettanomyces and a clean, lactic tartness. A lean malt backbone provides just enough structure without competing with the fruit's natural acidity. On the palate, the grapefruit provides a pithy, refreshing snap that transitions into a bone-dry, effervescent finish. This De Molen creation showcases a masterful integration of fruit and wild microbes, resulting in a deeply refreshing yet intellectually stimulating sensory experience.

Appearance. SRM 4–6; pale gold with a subtle soft pinkish hue. Pours with a white, fizzy head that dissipates quickly to a thin collar, leaving minimal lacing. Significant haze from fruit solids and yeast.

Aroma. High intensity; immediate and punchy grapefruit zest and pith. Underlying moderate wild character featuring damp hay, light leather, and sharp lactic acidity. Very low crackery malt sweetness. Hop aroma is negligible, eclipsed by the citrus.

Taste. Bracingly tart initial impression with dominant grapefruit juice and peel flavors. A light, bready malt presence is quickly overtaken by a firm lactic sourness. Hop bitterness is low, but supplemented by a distinct grapefruit pith bitterness. The finish is extremely dry, clean, and lingering with a citrus-skin aftertaste.

Mouthfeel. Medium-light body; brisk and highly carbonated. No significant alcohol warmth at 5.5% ABV. Presents a slight puckering astringency from the grapefruit acid and pith, which enhances the perceived dryness.
