Debuting at the Borefts Beer Festival, this 5.5% ABV sour pours a striking ruby with an ephemeral pink-tinted head. The sensory profile is dominated by the intense, bright character of ripe cherries, balanced by a complex wild yeast presence that offers layers of leather and earthy funk. The fermentation is bone-dry, stripping away fruit sugars to leave behind a sharp, refreshing acidity and a lingering tart cherry skin finish. It is a sophisticated, highly attenuated example of the style.

Appearance. Deep ruby-red to garnet with a slight haze; features a moderate, pinkish-white head with fair retention and light lacing.

Aroma. High intensity of tart, fresh cherries and cherry pits. Complemented by moderate wild fermentation characteristics including hay, leather, and a light barnyard funk. Lactic acidity is prominent, with no discernible hop aroma or significant malt presence.

Taste. Initial impression is sharply acidic and fruity. Dominant flavors of fermented sour cherries and lemon zest give way to subtle notes of sourdough and wet hay. Hop bitterness is very low, as the balance is firmly toward acidity. The finish is very dry and crisp with a lingering tartness and a touch of fruit tannin.

Mouthfeel. Medium-light body with high, spritzy carbonation that enhances the perceived acidity. A light tannic astringency from the cherry skins adds structure, while alcohol warmth is very low and well-integrated.
