This pale Doppelbock presents a striking deep golden color, eschewing dark grains for a base of pale malts that supports its massive 10.5% ABV. The sensory experience is defined by a decadent infusion of white chocolate and hazelnuts, creating a profile reminiscent of liquid praline. Intensely malty and sweet, the aroma leads with creamy vanilla and toasted nut notes, which translate onto a full-bodied, luscious palate. While the finish is notably warm and nutty, the clean lager fermentation ensures the focus remains on the rich interplay between the bready malt and the indulgent adjuncts.
Appearance. Deep gold to light amber (SRM 8-12) with brilliant clarity. Pours with a large, creamy white head that exhibits good persistence and light lacing.
Aroma. High intensity with a rich, bready, and toasty malt backbone. Dominant notes of white chocolate and roasted hazelnuts are layered over a clean lager profile. Hop aroma is absent. A moderate, well-integrated alcohol aroma provides a pleasant warmth.
Taste. Initial impression is very rich and malty-sweet. Pronounced flavors of white chocolate, vanilla, and toasted hazelnut dominate, supported by a bready malt base. Hop bitterness is low, allowing the malt and adjuncts to lead the balance. The finish is long and warming with a lingering nutty aftertaste and no roasted or burnt character.
Mouthfeel. Full body with a smooth, creamy, and viscous texture. Carbonation is moderate-low. A noticeable alcohol warmth is present, consistent with its strength, but remains smooth without harshness.
