Info:: The Enfant Terriple is put for 6 months on cherries: 250 g sour, un-pitted cherries per litre beer. During this time, the bacteria are given time to digest all sugars even further and to let the soft natural souring have its way. Meanwhile, the cherries slowly donate their blood-red colour and their succulent taste. Part of this cherry also is transferred to the oak wine barrels where it – in a grow-bed of lactobacillus – during a year adds further to a woody souring and softening. The result is a triple-kriek ‘pur sang’. With this, a new saint is added to the Cuvée family of Brewery De Leite. The Cuvée Soeur’Ise, is a wink to cherry in French (= ‘cerise’). The divine saint has already seduced many, all over the world!

The brewers use lactobacillus to create a breeding ground in the oak wine casks. They then roll 40 kg cherries through the narrow opening in the barrels into 170L enfant Terriple. The yeast needs 5 months to break down all the sugars and for the gentle acidification process to work its magic. Over this period the cherries slowly release their blood red colour and tasty flavour. The result is a ‘thoroughbred’ triple kriek.
And as for the name… Cherries are ‘cerises’ in French and so the Cuvéé Soeur’Ise was born. A fine figure of a nun. The brewers claim it is impossible to lead their little nun astray…but they believe that she is more than capable of leading others into temptation…
The label was designed by Tinus Vermeersch.

De krieken geven hun donkerrode kleur, en hun fruitige smaak af aan het van origine blonde bier.
Het kriekbier wordt daarna nog verder gerijpt op eiken wijnvaten waardoor het bier nog verder verzuurt, maar ook verzacht. Serveertips Om het aroma van dit bier het best tot zijn recht te laten komen adviseren wij een bijhorend glas te gebruiken.
