This Black IPA balances dark, roasted complexity with a vibrant New World hop profile. The experience begins with an aromatic burst of tropical fruit and white wine from Nelson Sauvin, complemented by the floral citrus zest of Amarillo and the distinct creamy coconut undertones of Sabro. These fruity notes transition smoothly into a base of soft caramel and restrained roasted malt. The finish is clean and dry, highlighting a firm bitterness that remains smooth rather than ashy. It is a refined example of a Specialty IPA where the dark malt presence supports rather than dominates the hop-forward character.

Appearance. Deep ebony to black (SRM 35-40). Opaque in the glass with a persistent, dense, light tan head that exhibits excellent retention and lacing.

Aroma. High hop intensity featuring crushed gooseberry and passionfruit from Nelson Sauvin, alongside floral citrus from Amarillo and a hint of coconut from Sabro. Beneath the hops, moderate notes of toasted bread and light chocolate emerge, with a very faint caramel sweetness and a clean fermentation profile.

Taste. Immediate impact of tropical fruit and resinous pine. Mid-palate introduces gentle roasted flavors of cold-brewed coffee and dark cocoa, avoiding any burnt or acrid qualities. The Nelson Sauvin provides a unique vinous character. Bitterness is firm and assertive but well-integrated with the malt. The finish is dry with a lingering note of citrus peel and soft roast.

Mouthfeel. Medium body with a smooth, slightly creamy texture. Moderate carbonation provides a crisp lift to the roasted elements. Alcohol warmth is light and well-integrated. No harsh astringency from the dark grains.
