This Black IPA presents a striking sensory contrast, leading with a vibrant tropical profile driven by Cashmere and Sabro hops. The aroma is dominated by Sabro's distinctive coconut and cream notes, complemented by the citrus and melon character of Cashmere. Beneath this fruit-forward intensity lies a smooth, roasty backbone that provides a foundation of light chocolate and toasted bread without any harsh acridity. The interplay between the dark, debittered malts and the New World hops creates a complex, modern profile. It finishes dry and firmly bitter, upholding the clean, hop-forward balance expected of a Specialty IPA.
Appearance.Dark brown to near black in color (SRM 35-38). The beer is clear with a persistent, moderate-sized tan head that leaves fine lacing on the glass.
Aroma.High hop intensity featuring prominent coconut, pineapple, and lime zest. Moderate malt character offers notes of light chocolate and toasted grain, supported by a clean fermentation profile and very low fruity esters.
Taste.Initial impression is hop-dominant with tropical fruit and citrus flavors. The malt profile is medium-low, providing a smooth coffee and cocoa flavor that avoids burnt or ashy notes. Bitterness is firm and medium-high, leading to a dry, slightly toasted finish with a lingering resinous aftertaste.
Mouthfeel.Medium-bodied with a smooth, slightly creamy texture. Carbonation is moderate, and there is a very light, well-integrated alcohol warmth. Astringency is notably low despite the dark malt presence.
