Appearance. Straw to light gold (approximately 5 SRM). Unfiltered with a moderate to full haze. Moderate white head with tight bubbles and good retention; effervescent.
Aroma. Moderate-high intensity featuring a dominant tropical passion fruit character. Secondary notes of sharp lactic tartness and a bready, doughy wheat malt backbone. Very low floral and spicy hop notes from the Hallertau Perle. A faint, clean mineral salt tang is present.
Taste. Initial impression is sharply tart and fruity with pronounced passion fruit. Moderate doughy malt flavor provides a brief sweetness before being overtaken by lactic acidity. Very low bitterness with no significant hop flavor. The salt character is noticeable but restrained, providing a mouthwatering mid-palate. Finishes bone-dry with a clean, acidic snap.
Mouthfeel. Medium-light body with high, prickly carbonation. The salt addition provides a tingly, mouthwatering quality and a slightly rounder texture than the acidity would suggest. Very low alcohol warmth.
