Oude Geuze Boon Vat 31 Mono Blend is een uniek bier dat het resultaat is van een zorgvuldige selectie en blending van oude lambiek uit één enkel foeder. Foeder 31 werd gedeeltelijk vernieuwd met nieuw Frans eikenhout, waardoor de lambiek een complex en verrassend karakter kreeg. Deze lambiek rijpte ruim 2,5 jaar in het vat en werd vervolgens gemengd met een klein percentage jonge lambiek om te zorgen voor hergisting op fles. Oude Geuze Boon Vat 31 Mono Blend heeft een diep gouden kleur met een stevige witte schuimkraag. Het aroma is rijk en houtachtig, met tonen van cognac, rokerige vanille, perzik en tropisch fruit. De smaak is volmondig, friszuur en harmonieus, met een fijne balans tussen het eikenhout, de fruitigheid en de typische lambiekzuren. De afdronk is lang, droog en verfrissend. Dit bier heeft een alcoholpercentage van 8,5%.

Il Boon Vat 31 Mono Blend è un’eccezionale Oude Geuze che ha maturato nel foeder #31 per 4 anni e mezzo. Prodotta il 30 novembre 2015 e imbottigliata il 14 maggio 2020, questa birra offre un aroma funky deciso, ma allo stesso tempo vellutato e morbido. Rivela note fruttate di albicocca, uva bianca, uva spina, ribes bianco, pesca e mela verde acerba, accompagnate da sfumature di cognac, frutta secca come le noci, aia, fieno, e richiami alla fattoria e alla cantina. Emergono anche sentori di cuoio, agrumi acidi di limone e scorza d’arancia, grano (pane), aceto di mele e una leggera presenza di muffa, il tutto arricchito da un chiaro carattere legnoso. Con un corpo medio-pieno e una carbonatazione media, al palato si confermano le sensazioni olfattive, arricchite da toni salmastri, tannici e vinosi, creando un profilo di gusto profondo, ben bilanciato e meravigliosamente complesso. L’integrazione impeccabile del profilo Brett con le note legnose e la componente alcolica contribuisce a una sensazione calda e avvolgente. Questa bevanda superba e raffinata presenta un amaro moderato e un finale lungo, secco e delicatamente aspro, con note funky, speziate e legnose.

Il Foeder #31 è una maestosa botte in rovere costruita tra il 1905 e il 1908 dalla società Bodenheim di Kassel, in Germania. Arrivata a Bruxelles nel 1919 come parte di una spedizione di merci in Belgio, quale risarcimento per i danni della Prima Guerra Mondiale, ha servito per quasi 70 anni prima di essere acquistata da Frank Boon nel 1988 insieme ad altre 20 botti. Dopo varie prove di affinamento, nel 1992 è stata riservata per la produzione della Geuze Mariage Parfait. Nel 2008, dopo una revisione durante la quale sono state sostituite dodici doghe del fondo, ha acquisito ulteriori sfumature che hanno convinto la famiglia Boon a preservarla per un progetto veramente speciale: l’Oude Geuze Vat 31.

All oak barrels in the Boon brewery have their own history and are characterized by unique microflora of wild yeasts. The bottles of Oude Geuze “VAT” are a combination of one specific wooden barrel (mono) and a minimal percentage of young Lambic (blend), which starts the refermentation in the bottle. The use of Lambic from one specific oak barrel (such barrels are also called “casks”) creates geuzes with very idiosyncratic characteristics: wine-like, whiskey-like, bone-dry or very tender. Foeder N° 31, een groot eiken vat, werd tussen 1905 en 1908 gebouwd door de firma Bodenheim uit Kassel (Duitsland). Hij kwam in 1919 in eenBrusselse Lambiekbrouwerij terecht als onderdeel van een grote partij materiaal die naar België verstuurd werd als vergoeding voor “oorlogsschade 14-18”. De foeder deed in deze oude lambiekbrouwerij dienst tot in 1988 en werd toen samen met een 20-tal foeders verkocht aan onze brouwerij.Deze foeders werden in de eerste jaren ingezet voor de rijping van lambiek van 1 jaar voor Oude Geuze Boon. De foeders die de fijnste Lambiek leverden werden uiteindelijk vanaf 1992 gereserveerd voor de productie van Geuze Mariage Parfait, waaronder N° 31. In 2008 was de foeder toe aan een grote revisie en werden er barstjes vastgesteld aan de onderzijde. In ons kuipersatelier werd de foeder in 2009 gedeeltelijk gedemonteerd en werden 12 duigen (de houten balken waaruit het vat is samengesteld) vervangen door nieuwe. Na de revisie combineerden we 2 werelden : de extra aroma’s toegevoegd door de nieuwe eik en de ondertussen 100 jaar oude microflora in de wand van het vat gaven ons telkens na 3 jaar rijping een bijzonder fijne Lambiek. Op 30/11/2015 werd er voor het eerst Lambiek uit onze nieuwe brouwzaal op deze foeder afgevuld. Het resultaat was bijzonder. We beslisten dan ook om deze lambiek te reserveren voor een speciale productie. Nooit eerder lieten we Lambiek voor een “VAT” productie in de foeder ouder worden dan 3 jaar. We beslisten om N° 31 zijn gang te laten gaan en bottelden de lambiek na 4 en een half jaar rijping. VAT 31 werd een delicate, zacht-fijne Oude Geuze. Hij kent een fijne pareling en aangename cognac-achtige neus. Het fluweelzachte maar toch stevige aroma met toetsen van abrikoos en nootjes wordt onderbouwd met een duidelijk eik karakter. Gebrouwen op 30 nov. 2015, gebotteld op 14 mei 2020.
