Foeder N° 86 is an oak barrel of 5.000 litres from 1935. The foeder is part of a series of 2 pieces and was specially built to be placed on the ends of the barrel hall. Before and back are as big as a foeder of 10.000 L, but the dibs are very short, making the foeders look like tambourines and in our brewery got the nickname " tamboerkes  Due to the many use, the front and back soils of these foeders were ready for replacement. This work was carried out in new French oak in the year 2016, making half the wood surface now consists of old oak (with its lambic microflora) and the other half of new oak. The brew of April 28, 2016 was the first filling after renewing foeder N° 86. The Lambiek for Oude Geuze VAT 86 has matured on it for 2 years and 7 months. The assembly consists of 90 % of lambic from Foeder nr. 86 and for 10 % from young Lambiek. After bottling on November 29, 2018 and after more than a year further maturation on the bottle, this VAT 86 is ready to be drank. With a fermentation rate of 94 % the Old Geuze VAT 86 is not extremely dry, but very full, nicely balanced.

The new oak has contributed a few special aromas to the Lambic: keys of wood caramel such as in cognac and smoky vanilla aromas like in some whiskies. The lagering on oak wood also strengthened the fullness without making the beer astringent. The wild fermented in the Lambiek of this VAT 86 created a number of good additional flavors and aromas, especially some peach and tropical fruit.

Foeder N°86 is een eiken vat van 5.000 liter uit 1935. De foeder is een vat van een reeks van 2 en werd speciaal gebouwd om op de uiteinden van de vatenzaal geplaatst te worden. Voor- en achterzijde zijn zo groot als een foeder van 10.000 L, maar de duigen zijn zeer kort, waardoor de foeders er uitzien als tamboerijnen. In de brouwerij kregen deze foeders de bijnaam “tamboerkes”. Door het vele gebruik waren de voor- en achterbodems van deze foeders aan vervanging toe. Dit werk werd uitgevoerd in nieuwe Franse eik in 2016, waardoor de helft van het houtoppervlak nu bestaat uit oude eik (met zijn lambiek-microflora) en de andere helft uit nieuwe eik. Het brouwsel van 28 april 2016 was de eerste vulling na het vernieuwen van foeder N°86. De lambiek voor Oude Geuze VAT 86 heeft er 2 jaar en 7 maanden op gerijpt. De assemblage bestaat voor 90% uit lambiek van foeder N°86 en voor 10% uit jonge lambiek. Na botteling op 29 november 2018 en na meer dan een jaar verdere rijping op de fles is deze VAT 86 klaar om gedronken te worden. Met een vergistingsgraad van 94% is de Oude Geuze VAT 86 niet extreem droog, maar wel heel volmondig, mooi in balans.

Het nieuwe eikenhout heeft een paar bijzondere aroma’s aan de Lambiek bijgedragen: toetsen van houtcaramel zoals in cognac en rokerige vanillearoma’s zoals bij sommige whisky’s. De lagering op eik verstevigde ook de volmondigheid zonder het bier daarbij astringent te maken. De wilde gisten in de Lambiek van deze VAT 86 zorgden op hun beurt voor een aantal goed aanvullende smaken en aroma’s, vooral wat perzik en tropisch fruit.

All oak barrels in the Boon brewery have their own history and are characterized by unique microflora of wild yeasts. The bottles of Oude Geuze “VAT” are a combination of one specific wooden barrel (mono) and a minimal percentage of young Lambic (blend), which starts the refermentation in the bottle. The use of Lambic from one specific oak barrel (such barrels are also called “casks”) creates geuzes with very idiosyncratic characteristics: wine-like, whiskey-like, bone-dry or very tender. Foeder 86 is from 1935 and in 2016, the front and back staves were replaced by new French Oak. The Blend is made out of 90% old lambic (31 months) from Foeder 86 and 10% young lambic.

Di medio corpo, con una consistenza liscia ed una carbonatazione abbastanza alta, il gusto richiama l’aroma: moderata amarezza e lieve acidità, note di polpa di uva bianca, mela rossa, frutti di bosco, un lieve funk, un po' di agrumi (mandarino), legno, vaniglia sottile, caramello ed un bel po’ di tannini.
Finale leggermente secco ed asciutto con una finitura acidula e legnosa, per una birra che nel complesso è molto ben equilibrata, morbida e pulita al palato e facile da bere nonostante la gradazione. “Il Foeder N°86, una botte di rovere da 5.000 litri risalente al 1935, è presente nel birrificio da circa 15 anni ed è stato riparato per metà, quattro anni fa (2016), sostituendo le parti danneggiate con rovere francese nuovo.
Il nuovo rovere ha apportato alcuni aromi speciali al Lambic: note di caramello di legno come nel cognac, aromi di vaniglia affumicata come in alcuni whisky ed una serie di sapori e fragranze aggiuntive, in particolare un po’ di pesca e frutta tropicale. La maturazione ne ha inoltre rafforzato la pienezza senza rendere la birra estremamente astringente. Prodotta il 28 aprile 2016, imbottigliata il 29 novembre 2018”.
