Dolle Dina is an assertive Double IPA that distinguishes itself with a striking amber to reddish hue, deviating from the paler modern standard to offer a more robust visual presence. At 8% ABV, it delivers an intense sensory experience led by a prominent hop profile of resinous pine, grapefruit zest, and tropical fruit. The amber malt base contributes subtle toasted notes and a hint of bread crust, providing a firm foundation for the aggressive, high bitterness. Clean fermentation and a medium-dry finish ensure high drinkability despite its strength, while a lingering, hoppy aftertaste underscores its bold, tempting character.
Appearance. Deep amber to reddish-copper (12–14 SRM); brilliant clarity to slight haze; persistent, dense, off-white head with excellent lacing.
Aroma. High intensity hop aroma featuring notes of pine resin, grapefruit, and subtle stone fruit; supported by a clean, grainy, and lightly toasted malt backbone with a neutral fermentation profile.
Taste. Strong hop-forward impression of resin and citrus zest; moderately high to very high bitterness that remains smooth rather than harsh. Supportive malt offers light toast flavors without heavy sweetness. Finishes medium-dry with a lingering, bitter, and hoppy aftertaste.
