This refreshing Grisette presents a rustic, farmhouse-inspired profile driven by the inclusion of 20% Emmer and a clean Pilsner malt base. The sensory experience is defined by the use of whole Hop Cones sourced from the Hof ten Dormaal farm, providing a delicate, floral, and earthy hop presence. Aromas of cracked grain and light citrus peel lead into a bone-dry palate where spicy yeast phenols and moderate bitterness provide structure. Its low alcohol content makes for an effervescent, sessionable ale that balances the heritage of ancient cereal grains with a crisp, peppery finish typical of the Saison style.

Appearance. Pale straw to light gold (3-5 SRM). Large, frothy white head with excellent retention and classic Belgian lacing. Unfiltered and moderately hazy due to the high Emmer content.

Aroma. Moderate intensity with a distinctively rustic, grainy character from the Emmer and Pilsner malt. Hop character is herbal and floral with a touch of earthiness. Yeast-derived esters offer notes of lemon zest and pear, while phenols contribute a moderate black pepper spiciness.

Taste. Bone-dry and highly attenuated. The initial flavor is of cereal grains and light nuttiness, followed by a firm hop bitterness. Hop flavors from the Hof ten Dormaal cones provide herbal and spicy notes. Fermentation character is clean but spicy, ending in a very dry, crisp finish with a lingering peppery aftertaste.

Mouthfeel. Light to medium-light body with very high, effervescent carbonation. No alcohol warmth. Crisp and refreshing with a slight creamy texture from the unmalted grain but no astringency.
