This Wild Specialty Beer is a complex sensory journey, marrying Alvinne’s signature Morpheus yeast culture with an intense infusion of 100% Schaarbeekse Kriek. The nose is a vibrant explosion of tart, dark cherries and earthy funk, underpinned by the sophisticated vinous notes of Chateauneuf Du Pape foeder aging. On the palate, a sharp but elegant lactic acidity carries deep notes of cherry skin and almond-like pit, evolving into layers of spicy French oak and red wine tannins. The finish is remarkably dry and structured, leaving a lingering impression of wild orchard fruit and refined wood character.

Appearance. Deep ruby to garnet with a slight haze; a thin, lively pinkish-white head with moderate retention and light lacing (SRM 25-30).

Aroma. High intensity; dominant sour cherry with almond-like pit notes; complex fermentation funk including leather and mild barnyard; rich red wine esters and toasted oak; no hop aroma.

Taste. Sharp initial acidity; rich, authentic cherry flavor that is acidic rather than sweet; secondary notes of plum and spicy oak; bone-dry finish with significant wine-like tannins and a clean, lingering lactic snap.
