Drawing from 3 Fonteinen’s mastery of spontaneous fermentation, Nocturne delivers a dark-malt forward twist on the Flemish Old Brown. This complex blend of three- and six-year-old full-malt brews and young lambik pours a deep mahogany with a tan head. The aroma is a rich, sour-sweet harmony of dark chocolate, burnt sugar, black cherry, and earthy, rustic funk. On the palate, a deep, layered dark malt profile shines with notes of raisins, figs, and subtle cocoa, balanced by a vibrant, wine-like lactic sourness and aged, sherry-like oxidation. It finishes dry, complex, and gently warming.
Appearance. Deep mahogany to dark reddish-brown with excellent clarity. Thick, persistent ivory to light tan head with fine lacing.
Aroma. High intensity. Complex blend of rich dark malt aromas including dark chocolate, toasted bread, and deep caramel, integrated with a moderate lactic sourness and earthy, rustic wild yeast esters. Pronounced dark fruit esters of black cherries, raisins, figs, and prunes, with a faint, pleasant sherry-like oxidation from the aged components. Hop aroma is absent.
Taste. Begins with deep, roasted malt flavors of cocoa, dark caramel, and burnt sugar, followed by a rich wave of dark fruits like plum, raisin, and black cherry. A balanced, clean lactic sourness cuts through the malt sweetness, creating a beautiful sweet-and-sour interplay. Hop bitterness is low, while the finish is dry to off-dry, lingering with notes of dark fruit, cocoa, and a faint sherry-like aged complexity.
Mouthfeel. Medium-full, velvety body. Low to moderate carbonation, offering a smooth, vinous texture. Noticeable but well-integrated, gentle alcohol warmth with no harshness or astringency.

Rond de koudste nachten brouwen we dan een donker, puur moutbier dat we laten fermenteren en rijpen in onze eikenhouten lambikvaten. Door een zeer oud deel – in dit geval zowel zes jaar oude (46%) als drie jaar oude versies (44%) – te mengen met een vers gebrouwen deel, creëren we onze eigen versie van een Vlaams Oud-Bruin. A Lambic abban különbözik a legtöbb sörtől, hogy a Zenne-völgyben őshonos vad élesztők és baktériumok erjesztésével, nem pedig a gondosan tenyésztett sörélesztő-törzsekkel történik az erjesztés. Ez az eljárás adja a sör jellegzetes ízét: száraz, boros és almaboros, gyakran savanykás utóízzel. A típus a gyümölcsös változatai ismerősen csenghetnek. Az egyik a Framboise, mely málnával együtt savanyított sör valamint a Kriek, ami meggy hozzáadásával készül, de ezek mellett igen népszerű alapanyag az alma, szőlő és a szilva is.
