A Lambic abban különbözik a legtöbb sörtől, hogy a Zenne-völgyben őshonos vad élesztők és baktériumok erjesztésével, nem pedig a gondosan tenyésztett sörélesztő-törzsekkel történik az erjesztés. Ez az eljárás adja a sör jellegzetes ízét: száraz, boros és almaboros, gyakran savanykás utóízzel. A típus a gyümölcsös változatai ismerősen csenghetnek. Az egyik a Framboise, mely málnával együtt savanyított sör valamint a Kriek, ami meggy hozzáadásával készül, de ezek mellett igen népszerű alapanyag az alma, szőlő és a szilva is.

Because of the high proportion of older lambics, the fermentation did not continue in the bottle and the blended lambic beer remained flat. The yeast dozed, hence the name – a local dialect for that typical little sleepy knock you get in the afternoon.
In return, with a natural-white-wine-like aroma and malty citrusy taste, the resulting beer is a subtle lambic blend, with a weighted average age of about 30 months upon its release. The oldest lambics were brewed at the beginning of 2018.
This is the first Doesjel in 75cl bottles since 2006.
