The Dancer is a refined Witbier that captures the essence of a Belgian summer. Brewed with a foundation of Pilsner malt, unmalted wheat, and oat malt, it presents a signature hazy, milky glow. The aroma is a vibrant bouquet of Indian coriander and a zesty trifecta of Curacao peel, sweet orange peel, and lemon peel. Subtle herbal notes from chamomile and Lubelski hops add complexity to the nose. On the palate, a crisp, dry character highlights the citrus zest and light phenols from the FM20 Białe Walonki yeast. This airy, highly effervescent ale balances a creamy mouthfeel with a refreshing, spice-forward finish.

Appearance. 2-4 SRM. Very pale straw to light yellow with a distinct cloudy, milky haze from starch and yeast. Features a dense, white, moussy head with excellent retention and lacing.

Aroma. Moderate to high intensity. Bright, zesty citrus fruitiness from orange and lemon peel. Spicy, peppery notes of Indian coriander and a subtle floral, herbal hint of chamomile. Light bready maltiness from Pilsner malt with a touch of honeyed grain. Very low, spicy Lubelski hop aroma.

Taste. Initial impression is refreshingly crisp. Moderate bready and grainy malt flavor follows. Vibrant citrus zest and herbal-spicy flavors dominated by coriander and chamomile. Low bitterness provides gentle support without overshadowing the spice. Clean, dry finish with a lingering orange zest aftertaste.

Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the unmalted wheat and oat malt. High carbonation creates a lively, effervescent character. Very refreshing with no alcohol warmth or astringency.
