The Barber is a vibrant Hazy IPA that leads with an explosive citrus and tropical bouquet driven by a trifecta of Mosaic, Amarillo, and Citra hops. The inclusion of wheat malt and oat flakes creates a soft, pillowy foundation that carries layers of Meyer lemon, tangerine, and ripe mango. Despite its 40 IBU, the bitterness is expertly refined to a smooth, unobtrusive level, allowing the juicy hop character to remain the focal point. This beer offers a lush, refreshing experience where the clean malt backbones of Pale Ale malt support a sophisticated, modern hop profile.

Appearance. Pours a hazy, glowing straw to light yellow color (approximately 4 SRM) with an opaque, juice-like shimmer. It is topped by a thick, meringue-like white head that exhibits excellent retention and leaves a delicate trail of lacing on the glass.

Aroma. High-intensity hop aromas dominate, bursting with notes of pink grapefruit, tropical passion fruit, and sweet orange zest from the Mosaic and Citra additions. A subtle floral and stone fruit undertone from Amarillo emerges as it warms, supported by a clean, lightly bready malt presence and neutral fermentation esters.

Taste. The palate is greeted by a wave of succulent citrus and stone fruit flavors. Mosaic contributes complex berry and tropical notes, while Citra and Amarillo provide sharp lime and peach highlights. The malt flavor is low, presenting as a simple grainy sweetness. The bitterness is mild and notably soft, finishing off-dry with a lingering, juicy fruit aftertaste.

Mouthfeel. Medium-bodied with a soft, silky texture contributed by the flaked oats and wheat. Carbonation is moderate, enhancing the fruity sensation without becoming prickly. There is no hop astringency or harshness, and the 5.8% alcohol provides a very subtle, well-integrated warmth.
