Potion #21 is an indulgent Imperial Stout that leans into the pastry category through the addition of cocoa nibs and lactose. The sensory profile is dominated by a rich, bittersweet chocolate core, complemented by the unique, leathery dried fruit character of cascara. Bourbon barrel aging adds sophisticated layers of toasted oak, vanilla, and a gentle spirituous warmth. Visually jet black and opaque, it offers a dense, chewy mouthfeel driven by a high original gravity of 25 Plato. Dark roasted malts provide a coffee-like backbone, ensuring the sweetness from the lactose remains balanced by a firm, roasted finish.

Appearance. Jet black and completely opaque (40+ SRM). Crowned by a thick, creamy, deep tan head with moderate retention and significant lacing that clings to the glass as it recedes.

Aroma. High intensity and complex. Dominant notes of dark chocolate and cocoa nibs meld with vanilla and toasted oak from the bourbon barrels. The cascara provides a distinct dried fruit layer reminiscent of cherries and raisins, set against a backdrop of espresso-like roasted malt and a hint of sweet cream from lactose.

Taste. The initial impression is rich and sweet, lead by decadent bittersweet chocolate and vanilla. A deep roasted malt character follows, offering flavors of charred grain and black coffee. The cascara adds an earthy, berry-like complexity. Hop bitterness is moderate but well-integrated, providing enough balance against the residual lactose sweetness. The finish is long and warming with lingering notes of bourbon-soaked oak and dark cocoa.

Mouthfeel. Very full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the beer's creamy weight. A smooth, gentle alcohol warmth is present, reflecting the bourbon barrel influence without being sharp or hot.
