This decadent Double IPA offers a breakfast-inspired sensory journey, blending the tropical punch of Citra and Mosaic hops with a lush fruit profile. Aromas of ripe strawberry and blueberry merge seamlessly with a subtle hint of maple syrup and sweet vanilla. On the palate, the creamy addition of lactose creates a soft, pillowy texture reminiscent of whipped cream over pancakes. The hop character provides a necessary counterpoint of mango and citrus, while the berry pur e adds a juicy depth. Despite its strength, the finish remains smooth, balancing indulgent sweetness with a restrained hop bitterness characteristic of a modern New England-style ale.
Appearance. Deep gold to hazy amber (8-12 SRM) with a subtle reddish-purple tint from the berry pur e. Opaque clarity with a thick, frothy, off-white to pale pink head showing excellent persistence and dense lacing.
Aroma. High intensity. Prominent notes of macerated strawberries and wild blueberries dominate, supported by the tropical citrus and stone fruit character of Citra and Mosaic hops. A background of sweet maple syrup and creamy vanilla provides a pastry-like sweetness, while the malt remains neutral and doughy.
Taste. Initial impression is a burst of mixed berry jam followed by a soft, bready malt sweetness. Hop flavors of grapefruit and pineapple emerge in the mid-palate. Bitterness is moderate-low, avoiding any harshness. The finish is lingering and sweet with notes of maple-drizzled pancakes and a touch of vanilla cream.
