Phantasy is a modern American IPA designed to showcase the cutting edge of brewing science through the use of Phantasm thiol powder and Cryo Nelson Sauvin hops. This beer delivers a high-intensity sensory experience characterized by explosive New World wine notes and a "tooty fruity" energy. The aromatic profile is dominated by the specific sensory markers of Nelson Sauvin—crushed gooseberry and white wine grapes—which are amplified by the thiol-rich Phantasm skins. Despite its sessionable strength, it maintains the hoppy, bitter balance expected of the style, offering a crisp, clear, and exceptionally aromatic celebration of tropical fruit and biotransformation.
Appearance. Medium gold (6 SRM); brilliant clarity with exceptional transparency; features a medium-sized, persistent white head that leaves delicate, fine-textured lacing.
Aroma. High intensity hop-forward aroma featuring prominent tropical fruit thiols—guava, passion fruit, and grapefruit. The Nelson Sauvin contribution is distinctive, providing notes of white wine grapes, gooseberries, and a hint of crushed currant. A low, clean, grainy malt presence supports the hop profile without distraction, alongside a very clean fermentation character.
Taste. Initial impression is vibrant and hop-dominant, with flavors of passion fruit, lime zest, and Sauvignon Blanc grapes. The hop flavor is high and complex, supported by a low, grainy malt profile that provides structure without sweetness. Bitterness is medium-high and clean, leading into a dry, crisp finish. The aftertaste is long and hoppy, characterized by lingering tropical fruit skins and a refined floral note.
Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is medium-high, providing a refreshing and lively mouthfeel. No perceived alcohol warmth or astringency, resulting in high drinkability.
