This effervescent Saison captures a poolside spirit with its bright, thirst-quenching profile. It opens with a bouquet of citrus and floral notes driven by Cascade and Athanum hops, supported by the clean, foundational bitterness provided by Magnum. The aroma is a complex dance of peppery yeast phenols and grapefruit esters, while the palate reveals a soft, grainy malt backbone typical of the style. Exceptionally dry and highly carbonated, it finishes with a crisp, herbal snap. This is a refreshing interpretation of a Saison, balancing rustic Belgian yeast character with a modern, hop-forward brightness that remains approachable and lean.
Appearance. Pale gold (approx. 5 SRM) with a slight, hazy shimmer. Topped by a dense, rocky white head that shows excellent retention and leaves delicate Belgian lace on the glass.
Aroma. Moderate to high intensity featuring a mix of citrusy esters—grapefruit and lemon—and spicy yeast phenols reminiscent of black pepper. The hop character is floral and slightly earthy. Malt is low but provides a subtle, fresh-baked grain scent.
Taste. Initial impression is crisp and dry. Dominant flavors of citrus zest and floral hops from the Cascade and Athanum additions are paired with a medium-low peppery spice. Malt flavor is low and grainy. Bitterness is moderate but assertive due to the Magnum hops and very high attenuation. The finish is remarkably dry and clean with a lingering spicy, herbal aftertaste.
Mouthfeel. Light-bodied and highly effervescent. The high carbonation creates a prickly, refreshing sensation on the tongue. No alcohol warmth is detected. Smooth and crisp with no astringency.
