This Saison presents as a rustic and refreshing farmhouse ale, delivering a quintessential Belgian fermentation profile. Its character is defined by a vibrant interplay of peppery phenols and expressive fruity esters, reminiscent of lemon zest and green pear. A base of grainy Pilsner malt and cereal grains provides a soft, rustic texture that supports subtle floral and herbal hop notes. Highly attenuated and effervescent, it finishes exceptionally dry with a lingering, spicy bitterness. This standard-strength interpretation balances yeast-driven complexity with high drinkability, making it a classic example of the seasonal tradition that captures the spirit of a summer binouze.
Appearance. Pale gold to soft orange in color (5-8 SRM). Topped by a long-lasting, dense, rocky white head that leaves significant Belgian lace. Clarity is slightly hazy due to being unfiltered.
Aroma. High intensity with a complex blend of fruity-spicy yeast. Esters suggest lemon, orange peel, and red apple, complemented by a moderate spicy phenol character like cracked black pepper. Hop aroma is low to moderate with floral and earthy notes. The malt is lightly grainy and rustic.
Taste. Initial impression of grainy malt followed quickly by expressive yeast character. Flavors of citrus fruit and spicy black pepper dominate the mid-palate. Hop flavor is low and earthy. Bitterness is moderate but perceived as firm due to very high attenuation. The finish is remarkably dry with a lingering spicy and bitter aftertaste.
Mouthfeel. Medium-light body with very high carbonation, creating an effervescent and prickly sensation. Alcohol warmth is very low and well-integrated. Crisp, refreshing, and highly digestible without any astringency.
