The 2026 vintage of Stubborn Imperial Stout presents a formidable sensory experience, anchoring its profile in a deep, layered complexity. Dominated by a robust grain bill featuring Pale, Munich, and Chocolate malts alongside Roast Barley, the beer delivers an intense infusion of rich espresso and bittersweet dark chocolate. Ella hops provide a subtle, earthy counterpoint to the massive malt presence. High alcohol integration provides a gentle winter warmth, while the inclusion of Oat Malt creates a luscious, velvety texture. This is a bold, evolving Imperial Stout designed for longevity, balancing aggressive roasted bitterness with a lingering, dark-fruit-tinged finish.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a dense, persistent dark tan head that leaves thick lacing on the glass. High viscosity and visible 'legs' appear when the glass is swirled.
Aroma. High intensity. Dominant notes of freshly ground espresso and dark cocoa from the Chocolate malt and Roast Barley. Secondary aromas include caramel, toffee, and a hint of dark dried fruit like raisins. A clean, spicy hop note from the Ella hops peeks through the roast, accompanied by a refined, smooth alcohol presence.
Taste. Rich and multifaceted; initial flavors of scorched grain and dark chocolate give way to a deep, bready Munich malt sweetness. The hop bitterness is firm, balanced by significant residual sugars and Maltodextrin. Mid-palate reveals black licorice and charred grain. The finish is long and bittersweet, with a warming alcoholic glow and a final touch of roasted dryness.
Mouthfeel. Full to very full-bodied with a thick, chewy, and velvety texture enhanced by the Oat Malt. Carbonation is low to moderate. Noticeable but smooth alcohol warmth is present, creating a lingering 'winter warmth' without any harsh fusel heat.
