This session-strength Spice, Herb, or Vegetable Beer reinterprets the ancient Gruit tradition with a botanical complexity reminiscent of Amaro. Eschewing hops entirely, the profile is defined by an intricate layer of Douglas Fir and Blue Spruce, providing a bright, citrus-like resinous quality. Deep, earthy notes of Burdock and Sarsaparilla ground the mid-palate, while a sharp, medicinal bitterness emerges from Gentian, Wormwood, and Cinchona. Szechuan Pepper adds a subtle, tingling spice that dances alongside the floral lift of Meadowsweet. It is a lean, profoundly aromatic ale where the botanicals provide both the structural bitterness and the primary sensory identity.
Appearance. Pale gold to light amber (SRM 5–8). Effervescent with a thin, white head that dissipates quickly due to the presence of botanical oils. A slight haze is present from the complex array of extracts and botanicals.
Aroma. High intensity and profoundly complex. Immediate resinous notes of pine and forest floor from Douglas Fir and Blue Spruce. Secondary layers reveal medicinal herbs like Horehound and Wormwood, followed by earthy, root-like scents of Sarsaparilla and Burdock. No hop aroma is present; instead, a spicy, peppery lift from Szechuan Pepper dominates.
Taste. The initial impression is a bright, needle-like citrus sourness from the conifers. A firm, non-hop bitterness follows, driven by Quassia and Gentian, which feels more medicinal and lingering than traditional lupulin. Malt is a background player, offering light cracker-like notes. The finish is bone-dry and botanical, with a spicy, tingling aftertaste from Szechuan Pepper and Angostura.
Mouthfeel. Light-bodied and lean. Moderate to high carbonation enhances the botanical lift. A slight herbal astringency is present, providing a cleansing, tea-like grip on the palate. Alcohol warmth is non-existent.
