This barrel-aged Brett Beer presents a captivating intersection of rustic wild fermentation and elegant viticulture. Brewed as a Wild Red Ale, it pours a deep burnt amber, releasing an aromatic bouquet of toffee malt intertwined with the distinct, flint-like mineral character of Beechworth Chardonnay barrels. The palate is defined by a complex, non-lactic acidity that brightens notes of dried stone fruits and subtle barnyard funk. Its bone-dry finish is accentuated by a vinous quality and lingering earthy undertones, showcasing a sophisticated balance between malt structure and the transformative nature of Brettanomyces during its barrel maturation.
Appearance. Deep burnt amber in color (SRM 14-17). Displays a fine-beaded, off-white head with moderate retention and light lacing. Clarity shows a slight, natural haze consistent with barrel-aged wild fermentation.
Aroma. Moderate to high intensity. Initial notes of toasted bread and toffee are layered with Brettanomyces esters of apricot and overripe tropical fruit. A prominent flinty, mineral aroma reflects the Chardonnay barrel influence, accompanied by a light earthy funk like wet hay.
Taste. A bright, complex acidity cuts through the foundational toffee malt. Flavors of dried fruit and a distinct vinous, white wine character lead to a bone-dry, crisp finish. Bitterness is low, allowing the mineral-rich, flinty notes and light Brett funk to linger cleanly on the palate.
Mouthfeel. Medium-light body with a lean, highly attenuated texture. Carbonation is moderate to high, providing a lively, effervescent prickle. Alcohol warmth is negligible; a slight tannic dryness from the wood adds structure.
