This thiolised black Belgian Double IPA presents a complex collision of dark malts and vibrant New World hops. The heavy lifting of Citra, Mosaic, and Nelson Sauvin provides an intense aromatic profile of sweet tropical fruit, citrus, and candied lollies. Beneath the hop canopy, Northern Brewer, Cascade, and Centennial contribute resinous depth, while the dark malt base delivers decadent notes of chocolate, coffee, and molasses. Despite its dark appearance and roast-forward flavors, it maintains the aggressive bitterness and hop-driven soul of a Double IPA, finishing with a smooth, lingering warmth from its significant strength and Belgian-influenced fermentation character.
Appearance. Jet black and opaque (SRM 40+). Topped with a thick, persistent, creamy tan head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring prominent notes of mango, passionfruit, and grapefruit pith from Citra and Nelson Sauvin. Distinctive sweet, candy-like esters are layered over a base of dark chocolate, roasted coffee, and a hint of molasses. A light peppery phenol and stone fruit ester profile from the Belgian yeast provides added depth.
Taste. Initial impression is a burst of tropical fruit and citrus oil from Mosaic and Cascade, quickly transitioning into a rich malt profile of cocoa and espresso. High bitterness provides a necessary counterpoint to the high residual sweetness and molasses notes. The finish is long and complex, balancing resinous hop character with dark roasted grains and a clean, warming alcohol presence.
Mouthfeel. Full-bodied and viscous with a smooth, creamy texture. Carbonation is moderate-high, providing a lifted feel despite the density. Noticeable but well-integrated alcohol warmth without harshness.
