This refreshing Berliner Weisse is an aromatic explosion of summer berries and botanicals. Bright, jammy notes of ripe strawberry and raspberry dominate the profile, lifted by the zesty, citrus prickle of fresh lime. A cool, herbal undercurrent of mint weaves through the fruit, providing a crisp counterpoint to the clean, sharp lactic sourness characteristic of the style. Subtle undertones of raw bread dough from the wheat malt and Pilsner malt provide a light foundation, ensuring the acidity remains bright rather than abrasive. This vibrant combination results in a highly effervescent and thirst-quenching experience, finishing exceptionally dry with a lingering essence of tart fruit and garden-fresh herbs.

Appearance. Pours a hazy, soft pink to light reddish hue (SRM 4-7). Topped with a fizzy, light-pinkish head that dissipates quickly, leaving minimal lacing, consistent with high acidity and fruit oils.

Aroma. High intensity; sharp lactic sourness leads, followed immediately by prominent aromas of fresh strawberry and tart raspberry. A distinct citrus lime zest provides a bright top note, while a subtle, cooling mint aroma adds complexity. Background notes of sourdough bread and raw wheat malt are present, with no hop aroma.

Taste. Initial impression is a clean, sharp lactic acidity. Ripe strawberry and tangy raspberry flavors are vivid and complementary to the tartness. Lime juice provides a citrus snap in the mid-palate, while a faint herbal mint note emerges toward the end. Minimal grainy wheat malt flavor provides a light structure. Bitterness is undetectable, and the finish is very dry and crisp with a lingering tart berry aftertaste.

Mouthfeel. Medium-light body; the 5.5% alcohol by volume adds a slight weight compared to traditional examples. Carbonation is very high and effervescent. Crisp acidity provides a puckering sensation with light alcohol warmth. Creaminess is low, and there is no astringency.
