Appearance. Straw (3 SRM). Hazy appearance due to the addition of lemon juice and peel. Large, frothy white head with poor retention, typical of the style.
Aroma. High intensity. Dominant sharply sour lactic character followed by potent notes of fresh lemon zest and juice. Secondary aromas of sweet vanilla and a distinct, spicy-earthy liquorice root presence emerge, set against a background of raw bread dough and wheat.
Taste. Initial impression is a powerful, clean lactic sourness and tart lemon flavor. The mid-palate reveals a grainy, doughy wheat malt character accompanied by gentle vanilla sweetness and a noticeable saltiness that enhances the citrus. Bitterness is undetectable; acidity and salt provide the balance. Finishes very dry and crisp with a lingering hint of liquorice.
Mouthfeel. Medium-light body with a crisp, refreshing acidity. High carbonation provides a lively, effervescent prickle on the tongue. Smooth texture from the vanilla with a slight mineral tang from the salt.
