This Berliner Weisse presents a vibrant, tropical transformation of the classic German style. A sharp, clean lactic sourness serves as the foundation for a profile dominated by pungent, tart pineapple and exotic passionfruit. The addition of sweet mango provides a luscious counterpoint to the high acidity, while a subtle background of raw bread dough and grainy wheat malt maintains the beer's traditional structure. Extremely refreshing and highly effervescent, it finishes bone-dry with a lingering tang. The sensory experience is defined by its bright, sun-drenched fruit character and crisp, puckering finish, making it a modern, fruit-forward interpretation of the style.

Appearance. SRM 2-3. Pale straw to light yellow with a slight haze from fruit and wheat proteins. Features a large, dense white head that typically shows poor retention, characteristic of the style's high acidity. Highly effervescent.

Aroma. High intensity of sharp, clean lactic sourness. Dominant tropical fruit notes of fresh pineapple, floral passionfruit, and succulent mango. Secondary notes of raw bread dough and sourdough-like wheat malt. No hop aroma or diacetyl detected.

Taste. Initial impression is a sharp, refreshing lactic tartness. The flavor is dominated by zesty pineapple and tangy passionfruit, while a juicy mango sweetness provides balance. A light, bready, grainy wheat malt flavor is noticeable in the background. Bitterness is undetectable, with acidity providing the primary balance. Finishes very dry and crisp with lingering tropical fruit tartness.

Mouthfeel. Light-bodied but not watery. Very high carbonation creates a lively, spritzy sensation on the tongue. Crisp acidity provides a puckering quality. No alcohol warmth is perceived.
