This refreshing take on a Straight Sour Beer, reminiscent of a Berliner Weisse, opens with a bright, citrusy, and herbal bouquet. The infusion of Koppi coffee beans introduces an unconventional yet harmonious layer of light-roast fruitiness rather than heavy char. A crisp, clean lactic sourness defines the palate, supported by subtle crackery malt. As the name suggests, the experience concludes with a unique tonic-like finish, where notes of citrus peel and cinchona bark provide a sophisticated, lingering bitterness. Appearance. Very pale straw (2–3 SRM). Large, dense white head with poor retention. Clarity ranges from clear to slightly hazy due to the botanical and coffee additions.
Aroma. High intensity lactic sourness with a sharp, lemony edge. Distinctive herbal and citrusy notes are present, complemented by the fruity, lightly-roasted aroma of Koppi coffee. No hop aroma is detectable; malt is low and crackery.
Taste. Clean lactic tartness dominates the initial impression, followed by a lemony fruit character. Minimal bready malt flavor supports the herbal coffee notes. Unlike the typical style, the finish features a lingering, tonic-like bitterness from citrus peel and cinchona bark. No hop flavor is present, and the balance is decidedly sour and dry.
Mouthfeel. Light body with high, prickly carbonation. No alcohol warmth. Crisp acidity provides a refreshing, mouth-watering sensation with a clean, non-astringent finish.
