Brewlihan Proper Black is a decadent, sensory-rich mead that masterfully integrates a trio of Blackberry, Black Currant, and Black Raspberry with the distinct toasted marshmallow notes of Meadowfoam blossom honey. The 344-day maturation in Maple Bourbon barrels elevates the profile, weaving in high concentrations of vanillin and a delicate maple undertone. On the palate, the intense, jammy dark fruit character is balanced by structured oak tannins and a smooth spirit-forward warmth. The result is a viscous and luxurious experience where the tartness of the berry skins perfectly offsets the deep, honeyed sweetness, finishing with a lingering, spiritous complexity.
Appearance. Opaque, deep ink-purple to near-black. No foam or head retention (still mead), though it exhibits exceptionally heavy legs and high viscosity on the glass.
Aroma. High intensity. Dominant aromas of jammy blackberry and tart black currant are layered over the marshmallow and vanilla bean perfume of Meadowfoam honey. The barrel aging contributes strong vanillin, toasted oak, and a clear bourbon spirit presence with a hint of maple sugar.
Taste. Initial impression is an explosion of concentrated dark fruit, specifically tart black currant and sweet black raspberry. The mid-palate reveals rich honey sweetness and creamy vanilla. Oak tannins provide necessary structure, while the Maple Bourbon barrel adds depth via charred wood and a subtle syrupy finish. No hop bitterness; balance is achieved through fruit acidity and barrel tannins. The aftertaste is long, sweet, and warming.
Mouthfeel. Full-bodied and highly viscous, bordering on syrupy. Carbonation is absent (still). Significant, well-integrated alcohol warmth from the 12% ABV and barrel aging. Smooth and coating with a light, pleasant fruit skin astringency.
